This is the cookie of my dreams, and one that has been in the making for a long time.
Almond croissants have always been my favorite thing to reach for, especially at the farmers market. I wanted to capture that experience in a cookie. The contrast of textures, the sweet nuttiness of the frangipane, the slightly crisp edges, and that soft finish of powdered sugar.
It starts with our signature brown butter cookie, rolled in feuilletine (thin crisp flakes that come from a baked crêpe), for those delicate, crispy shards that mimic the flaky edges of a croissant. It’s topped with frangipane and sliced almonds that toast gently in the oven, bringing out a warm, nutty depth.
Finished with a light dusting of powdered sugar, just enough to soften everything and bring it together.
It’s rich, textured, and layered in a way that feels familiar if you love almond croissants, but still very much its own thing.
