From the lightness of yuzu and strawberry to the warmth of earl grey and soft, floral notes, it moves between fresh and comforting without feeling heavy.

Inside you will find:

  • Ruby Japanese Madeleine

    • A soft, shell-shaped cake made with rich European butter, infused with lemon and orange zest, dipped in tangy, fruity, Belgian ruby couverture chocolate. Finished with a sprinkle of edible petals: a mix of calendula, blue cornflower and rose petals that are all natural and food grade. 

  • Yuzu Sable
    • This French-style sablé is infused with both yuzu powder and yuzu extract, for a citrus profile that is aromatic, slightly floral and refined. Rich egg yolks give it a naturally golden hu and a tender, buttery crumb. Each cookie is rolled in yuzu turbinado sugar, creating a crisp, sparkling edge that gives way to a soft, melt-in-your-mouth center.
  • Matcha Strawberry Shortbread
    • A twist on our Uji matcha shortbread, this cookie is made with two doughs pressed together into one. One side is earthy, smooth matcha made with ceremonial-grade Uji. The other is a bright strawberry shortbread made with real strawberry powder.
  • Earl Grey + Orange Financier

    • Financiers are small almond cakes traditionally baked in rectangular molds, named after their resemblance to gold bars. They’re known for their light, spongy texture and buttery base that comes from a winning combination of egg whites and brown butter.

      This one is infused with British Earl Grey tea, finely ground and steeped into the butter, then carried through the cake itself. The flavor is soft and aromatic, with a subtle citrus note from the bergamot.
