A version of our classic French financier made for spring.

Financiers are small almond cakes traditionally baked in rectangular molds, named after their resemblance to gold bars. They’re known for their light, spongy texture and buttery base that comes from a winning combination of egg whites and brown butter.

This one is infused with British Earl Grey tea, finely ground and steeped into the butter, then carried through the cake itself. The flavor is soft and aromatic, with a subtle citrus note from the bergamot.

Finished with candied orange peel placed on top before baking, which adds a tangy, textural bite.
